Quinoa with milk
Some people think that eating healthy means giving up on sweets and desserts. Well, not always. This dessert is the ideal dessert, it is really healthy, a dessert that you can eat without feeling guilty, and moreover it is completely packed with protein.
Ingredients:
1 cup of quinoa
2 cups of water
2 cups of semi-skimmed milk
1 Lemon zest
1 Cinnamon stick
4 table spoons of sugar (optional, you can use sweetener instead or nothing at all)
Preparation:
Boil the milk with the lemon zest and the cinnamon stick. In another pot boil the quinoa in the water until nearly all the water has been absorbed. Add little by little the previously boiled milk and let it simmer at very low fire until it starts to thicken again.
Serve in small cups, or bowls sprinkle with cinnamon and let it cool down.
Note: Remember to always soak and rinse properly the quinoa before cooking
